Shrimp And Mango Cocktail







Ingredients -

2 pieces mangoes ,ripe
1 piece medium size red bell pepper
150 grams shrimps ,cooked ,shelled and deveined
4 tbsp tuna spread
2 tbsp all purpose cream
1 tbs sugar
1 tbs lemon juice
salt and pepper to taste

Procedure -

Wash and dry mangoes .Cut in half lengthwise .Remove seeds and scoop out the flesh to within 1/4 inch of the shells and cut into cubes .Wash and dry the bell pepper Cut in half and place halves under the grill until skin burns and breaks .Let cool and peel away skin .Remove and slice pepper into strips .Set aside .mix together tuna spread ,cream ,sugar and lemon juice .Add the cooked shrimps and cubed mangoes .Toss to blend .Season to taste with salt and pepper .Spoon the cocktail mixture into chilled martini glass and top with strips of bell pepper .Garnish with mint leaves .

Chicken Roll - Ups







Ingredients -

2 pieces large tortilla flour
1/2 cup chicken spread
4 0z cream cheese ,softened
1/2 cup red bell pepper ,chopped
2 tbsp fresh coriander ,chopped
4 slices bacon ,crisp and crumbled
1/2 cup tomato ,chopped
150 grams chicken breast ,cooked thinly sliced
lettuce leaves


Procedure -

Warm tortillas ,keep covered to keep soft .In a small bowl ,combine chicken spread and cream cheese .Mix until smooth .Stir in pepper ,coriander and bacon Spread cheese and chicken spread mixture on warm tortilla .Top with chopped tomato and chicken slices 
then lettuce leaves .Roll each tortilla tightly .Cut each roll into 1 inch long slices .Garnish with lettuce leaves if desired .

Onion Blossoms







Ingredients -

1 piece large onion ,peeled or slice
oil for frying

Batter -

1 1/2 cup all purpose flour ,sifted
1 1/4 cup lime juice
1 cup soda 
2 tbsp lime rind ,finely grated
salt and pepper to taste

Creamy herb dip -

150 grams cream cheese
2 tbsp sour cream
1/4 cup tuna spread
2 tbsp spring onion ,chopped
2 tbsp basil leaves ,chopped
1 tbsp parsley ,chopped
salt and pepper to taste

Procedure -

Cut of 1/4 of the top of onion and feel away skins .Do not remove bottom root or slice into rings .Place knife directly across middle and slice down but not cutting through .Make several slices on each side approximately 1/4 inch apart .Soak onion in hot water for 1 minute and then soak in iced cold water for 3 minutes .Lightly dust with flour and dip in prepared batter and fry in hot oil until golden brown .To make batter ,place flour in a bowl and gradually stir in lime juice and soda water .Mix well to combine ,then stir in lime rind .Season to taste with salt and pepper .To make dip ,combine all ingredients in a bowl .Mix well until blended .

Beef Canapes With Basil Mayonnaise







Ingredients -

8 pieces slice bread
2 tbsp olive oil
1/2 cup mayonnaise
1/4 cup parmesan cheese
2 to 4 tbsp basil leaves ,chopped
1/4 tsp garlic powder or chopped fresh garlic
150 grams tenderloin ,cooked and slice
2 pieces tomatoes cut into slices
2 tbsp chives ,chopped

Procedure -

Toast the bread in a bread toaster .In a small bowl , combine mayonnaise ,cheese ,chopped chives and garlic .Mix well .Spread mayonnaise mixture on toasted bread .Top with slice beef and tomato slices .sprinkle with chives if desired .

Mushroom And Ham Skewers With Garlic Mayonnaise







Ingredients -

6 tbsp mayonnaise
2 cloves garlic ,pressed
1 tsp lemon juice ,fresh
4 tbsp olive oil
1/2 kilo ham ,cut into 30 pieces 1 inch squares
24 pieces mushroom
1/2 cup cherry tomatoes
1 cup pineapple chunks
2 medium size onion cut into 1 inch squares
2 medium size green bell pepper ,cut into 1 inch squares

Procedure -

Whisk mayonnaise ,garlic ,lemon juice and 1 tsp oil in a small bowl to blend .Season with salt and pepper .
Alternate ham ,mushroom ,cherry tomatoes ,onion and bell pepper on each skewer .Brush skewers with 2 tbsp oil .Grill over medium heat in a large skillet or barbeque grill .Brush with 2 tbsp of garlic mayonnaise . Cook until mushroom is softened .Serve with remaining garlic mayonnaise .
