Ingredients -
2 kilograms sugar
2 kilograms salt
3/4 kilograms black peppercorns crushed
5/8 kilograms juniper berries
1 kilograms dill chopped
5 each bay leaves
1/4 milliliter gin
2 kilograms salmon fillet whole with skin
Procedure -
Make the marination.Crush bay leaves,juniper berries and black peppercorns,sugar and dill.Add the marination in a plastic box.Place fillet meat side down in the marination and cover the skin side too.Cover and put pressure on the top and remove after around 24 hours.
Serves eight to twelve persons
